Storing Cheese

Store cheese in the warmer part of the refrigerator, such as the crisper or a shelve away from the fan.
Always re-wrap cheese after it has been opened using a fresh wrapping.
Different cheese requires different methods of storage.
Hard cheeses (such as Parmesan) should be wrapped to avoid further moisture loss using plastic wrap.
Semi-hard cheeses (such as Cheddar) can be wrapped in waxed paper or parchment paper.
Semi-soft cheeses (such as Brie or Blue cheese) should be wrapped in parchment paper or wax paper, or may be stored in a glass container.
Soft or fresh cheeses (such as Ricotta, Feta, or Mascarpone) should be kept in a glass container.
If cheese develops a mould, slice ½” below the mould off, the rest of the cheese will still be fine. If a mold develops on semi-soft or soft cheeses, the affected cheese should be discarded.

To store Ricotta, Mascarpone and other fresh cheeses, use a glass container to maintain its fresh flavour.
