Hard cheese is an ingredient commonly in gratin dishes, sauces, on salads as well as pasta dishes and soups. It is also wonderful served at the end of a meal with fruit or olives. A selection of hard cheese will complete your variety on a cheese board. Serve with figs, grapes, pears, nuts or olives on the side. Hard cheese, if stored properly, will have a long life span. Store wrapped in a parchment paper or aluminum foil in a lower part of your refrigerator. As with all cheeses, check the wrapping often and change if you find the parchment paper getting too soggy.
