Coffee - Ricotta Cream

    1 cup250 mLSALERNO - Traditional Ricotta
    3 tbspHeavy Cream
    1 tbspGround Coffee
    50 ozSugar
    1/2 cupWhipping Cream
    1 pkgVanilla Sugar
    10 ozAlmonds, chopped for garnish

    1. Place Salerno Ricotta Cheese in a large bowl. Add cream, ground coffee, vanilla sugar and sugar to taste. Whip until smooth.
    2. In a separate bowl, using electric mixer, whip the whipping cream until peaks are stiff.
    3. Add whipping cream to the ricotta mixture. Combine well. Scoop cream into serving glasses.
    4. Place a few pieces of mandarin on the top, sprinkle with almonds and finish off with a few chocolate shavings.
